May is Food Allergy Awareness Month.  15 million Americans suffer from food allergies.  Milk, eggs, peanuts, tree nuts, soy, wheat, fish, and shellfish account for 90% of food allergies.  Food allergies are the result of the immune system targeting a harmless substance, in this case a food protein. The body produces large amounts of immunoglobulin E also known as IgE which causes the release of histamine and other chemicals which trigger an allergic reaction.  Food allergies are diagnosed by a detailed medical history, physical exam, and skin testing.  Desensitization to foods has not been fully worked out as a treatment option in humans. To date the only treatment for food allergies is avoidance.  One must be educated on hidden allergens in foods, as well as be prepared in the case of accidental ingestion.
